The short answer

Open the reported Windows save folder

Confirm the folder contains files and has a recent modified time after a normal save.

Copy the entire folder to a separate dated backup location.
When the game saves
Patch 1.0.6 says Save, Main Menu and Quit all write the save. It also adds an autosave every minute. The same patch says crashes no longer write, which reduces the chance that a crash immediately overwrites the current data.
If the save appears corrupted

Close the game before copying or replacing any files.

Preserve the current Saves folder as a separate backup.

Update to the newest game build; Patch 1.0.9 includes a save-corruption fix described by the developer as an attempted resolution.

Only test a previous copy after both versions are safely preserved.
What is not guaranteed
